What does "sliced as if freshly cut" mean?
It is a slicing technique at controlled temperatures (just above zero) that keeps the softness, aroma and structure of the slice as if it had just been cut from the whole product. The slice neither dries out nor compacts during storage in the tray.
Why slice at temperatures above zero rather than below?
Slicing at low temperatures (but not below zero) avoids the crystallisation of water in the muscle cells, preserving the organoleptic characteristics. "Intense cold" slicing (below zero) would make the slice stiffer and would impoverish the aroma.
How do you store sliced charcuterie after opening?
Once the tray is opened, the slices should be eaten within 24–48 hours. They should be kept in the fridge at 0–4°C, ideally transferred to an airtight container or wrapped in cheese paper to retain moisture without condensation.
