What is the difference between pork wurstel, Bratwurst and Servelade?

Classic pork wurstel: a sausage of finely minced pork with spices, quick to cook. Bratwurst: a German/Swiss tradition, coarser grind, cooked with fresh pork leg. Servelade: a fine cooked/smoked sausage originating in northern Europe, delicate in profile, made with pork or chicken.

How do you cook wurstel on the barbecue?

Cook over indirect heat on a grill preheated to 180–200°C for 12–15 minutes, turning every 3–4 minutes. Do not pierce with a fork (it loses its juices): use tongs. For a crisp exterior, finish over high direct heat for the last 1–2 minutes.
